Recipe : Dukan Mayonnaise


Ingredients

  • 1 egg yolk
  • 1 tbsp Dijon mustard
  • Salt and black pepper
  • 1 tbsp chopped parsley or chives
  • 3 tbsp virtually fat-free fromage frais or quark


Makes 2 portions


Preparation
  1. Put the egg yolk in a mixing bowl and combine with the mustard. Season with salt and pepper and add herbs.
  2. Gradually mix in the fromage frais or quark, stirring continuously. Keep chilled.
