Recipe : Chicken with Lemon and Capers (Chicken picatta) (keto friendly)

Serves 4

Ingredients

  • 3 drops of oil
  • 1 red onion, finely chopped
  • 800g (1lb 12oz) chicken breasts, cut into thin slices
  • Grated zest of 1 lemon
  • 1 tbsp small capers, drained and rinsed
  • 75ml (2½ fl oz) lemon juice
  • 5 basil leaves, finely chopped
  • Salt and black pepper

Directions
    1. In a non-stick frying pan (oiled and wiped with kitchen paper), pan-fry the onion until it turns golden-brown, then put to one side. 
    2. Brown the chicken slices in the same pan over a medium heat. 
    3. Add the onion, lemon zest, capers, lemon juice, basil, salt and black pepper. 
    4. Serve piping hot.

    Lemon and Garlic Chicken With Spiced Spinach

    Total time: About 30 minutes

    Ingredients
    • 2 boneless skinless chicken breasts ( most weigh 8 to 10 ounces)
    • 2 tablespoons extra-virgin olive oil
    • 3 tablespoons fresh lemon juice
    • 2 garlic cloves, minced or pureed
    • 1 teaspoon chopped fresh rosemary
    • 1 generous bunch spinach, stemmed and washed well in 2 changes water, or 2 6-ounce bags baby spinach, washed
    • 2 allspice berries, lightly toasted and ground
    • 1/2 teaspoon coriander seeds or cumin seeds, lightly toasted and ground
    • 1/4 teaspoon ground cinnamon
    • Salt to taste
    • Freshly ground pepper
    • 2 tablespoons all-purpose flour or a gluten-free flour such as rice flour or corn flour
    • 2 tablespoons grapeseed, sunflower or canola oil


    Directions
    1. Stir together the olive oil, lemon juice, garlic, rosemary, and salt and pepper in a large bowl. Cut each chicken breast into 2 equal pieces (3 if they are 12 ounces or more) and place in the bowl. Stir together and refrigerate 15 to 30 minutes.

    2. Combine ground allspice, coriander or cumin, and cinnamon in a small bowl or ramekin and set aside.

    3. Remove chicken from the marinade and pat dry (discard marinade). Place two sheets of plastic wrap (1 large sheet if you have extra-wide wrap) on your work surface, overlapping slightly, to make 1 wide sheet, and brush lightly with olive oil. Place a piece of chicken in the middle of plastic sheet and brush lightly with oil. Cover the chicken with another wide layer of plastic wrap. Working from the center to the outside, pound chicken breast with the flat side of a meat tenderizer until about 1/4 inch thick. (Don’t pound too hard or you’ll tear the meat. If that happens it won’t be the end of the world, you’ll just have a few pieces to cook.) Repeat with the remaining chicken breast pieces.

    4. Season pounded chicken breasts with salt and pepper on one side only. Dredge lightly in the flour (you won’t use all of it).

    5. Turn oven on low. Heat a wide, heavy skillet over high heat and add the oil. When oil is hot, place one or two pieces of chicken in the pan – however many will fit without crowding the pan. Cook for 1 1/2 minutes, until bottom is browned in spots. Turn over and brown on other side, about 1 1/2 minutes. (Do not overcook or chicken will be dry.) Transfer to a platter or sheet pan and keep warm in the oven. If there is more than a tablespoon of fat in the pan, pour some (but not all) of it off into a jar or bowl.

    6. Turn burner heat down to medium. Add ground spices to the pan and when they begin to sizzle add spinach and salt and pepper to taste. Cook, stirring with a wooden spoon and deglazing the bottom of the pan with the liquid that comes off the spinach, until spinach wilts, 2 to 3 minutes. Remove to a platter or to plates and serve with the chicken.

    Yield: Serves 4

    Advance preparation: The chicken breasts can be pounded several hours ahead – but marinate them shortly before cooking — and kept between pieces of plastic in the refrigerator.

    Recipe: Braised Chicken With Lemon and Olives

    Chicken thighs make the best braises; use skin-on bone-in thighs for the best flavor. Though it could be done on the stovetop, this dish is oven-braised.

    Ingredients

    • 8 chicken thighs, skin-on and bone-in, about 3 1/2 pounds
    •  Salt and pepper
    • ½ teaspoon red pepper flakes
    • 6 garlic cloves, minced
    • ½ teaspoon crushed fennel seeds
    • 1 tablespoon roughly chopped rosemary
    • 1 tablespoon olive oil
    • 2 Meyer lemons, cut in wedges
    • 1 cup flavorful olives with pits, a mixture of black and green, about 1 pound
    • 1 cup chicken broth
    • 3 tablespoons chopped parsley


    Directions

    1.  Pat chicken thighs dry with paper towels. Season well with salt and pepper and place in an earthenware baking dish in one layer, skin side up. Sprinkle with red pepper, garlic, fennel and rosemary and drizzle with olive oil. Rub seasoning into thighs on all sides. Tuck lemon wedges here and there. Let marinate for 15 minutes. Heat oven to 375 degrees.

    2.  Put baking dish in oven, uncovered, and roast until skin browns lightly, about 20 minutes. Scatter olives evenly over chicken and add broth. Cover tightly and bake for 1 hour, until meat is very tender when probed with a skewer.

    3.  Remove thighs and lemon wedges and arrange on a platter. Keep warm. Pour pan juices into a saucepan and quickly skim fat from surface. Over high heat, simmer rapidly until reduced by half. Spoon juices over chicken, sprinkle with parsley and serve.
