Mediterranean Chicken with Artichokes, Spinach & Olives

Ingredients
  • 1 pkg (about 1 1/2 lbs) boneless skinless chicken breast cutlets, pounded 1-inch thick
  • salt and pepper to taste
  • pan searing flour
  • 2 Tbsp extra virgin olive oil
  • 1/2 cup white wine
  • 2 1/2 cups chicken broth
  • 1/3 of a 3 oz jar capers, drained, plus additional for garnish
  • 1/4 lb pitted olives, halved
  • 3/4 of an 11 oz container baby spinach
  • 1 pkg (12 oz) artichoke hearts halves & quarters (frozen foods)
  • Juice of 2 lemons (about 1/3 cup), plus additional lemon slices for garnish
  • 2 Tbsp salted butter

Directions
  1. Season chicken lightly with salt and pepper. Dust with pan-searing flour; pat off excess.
  2. Heat oil in braising pan on MED-HIGH until oil faintly smokes; add chicken. Cook about 3 min until chicken changes color one-quarter of way up and seared side has browned. Turn over; cook about 2 min, until second side has browned. Remove chicken from pan; set aside.
  3. Remove pan from heat; add wine and broth. Return pan to heat; bring to boil. Cook, stirring, about 4 min until liquid is reduced by half. Add capers, olives, spinach, artichokes, and chicken; cover. Cook about 7 min until internal temp of chicken reaches 165 degrees (check by inserting thermometer halfway into thickest part of chicken). Remove chicken from pan; set aside.
  4. Transfer veggie mixture to serving platter; reserve liquid in pan. Top veggies with chicken. Add lemon juice and butter to pan; stir to melt butter. Cook, stirring, about 4 min, until liquid is reduced. Pour liquid over chicken and veggies; garnish with lemon slices and capers.

Lemon and Garlic Chicken With Spiced Spinach

Total time: About 30 minutes

Ingredients
  • 2 boneless skinless chicken breasts ( most weigh 8 to 10 ounces)
  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 2 garlic cloves, minced or pureed
  • 1 teaspoon chopped fresh rosemary
  • 1 generous bunch spinach, stemmed and washed well in 2 changes water, or 2 6-ounce bags baby spinach, washed
  • 2 allspice berries, lightly toasted and ground
  • 1/2 teaspoon coriander seeds or cumin seeds, lightly toasted and ground
  • 1/4 teaspoon ground cinnamon
  • Salt to taste
  • Freshly ground pepper
  • 2 tablespoons all-purpose flour or a gluten-free flour such as rice flour or corn flour
  • 2 tablespoons grapeseed, sunflower or canola oil


Directions
1. Stir together the olive oil, lemon juice, garlic, rosemary, and salt and pepper in a large bowl. Cut each chicken breast into 2 equal pieces (3 if they are 12 ounces or more) and place in the bowl. Stir together and refrigerate 15 to 30 minutes.

2. Combine ground allspice, coriander or cumin, and cinnamon in a small bowl or ramekin and set aside.

3. Remove chicken from the marinade and pat dry (discard marinade). Place two sheets of plastic wrap (1 large sheet if you have extra-wide wrap) on your work surface, overlapping slightly, to make 1 wide sheet, and brush lightly with olive oil. Place a piece of chicken in the middle of plastic sheet and brush lightly with oil. Cover the chicken with another wide layer of plastic wrap. Working from the center to the outside, pound chicken breast with the flat side of a meat tenderizer until about 1/4 inch thick. (Don’t pound too hard or you’ll tear the meat. If that happens it won’t be the end of the world, you’ll just have a few pieces to cook.) Repeat with the remaining chicken breast pieces.

4. Season pounded chicken breasts with salt and pepper on one side only. Dredge lightly in the flour (you won’t use all of it).

5. Turn oven on low. Heat a wide, heavy skillet over high heat and add the oil. When oil is hot, place one or two pieces of chicken in the pan – however many will fit without crowding the pan. Cook for 1 1/2 minutes, until bottom is browned in spots. Turn over and brown on other side, about 1 1/2 minutes. (Do not overcook or chicken will be dry.) Transfer to a platter or sheet pan and keep warm in the oven. If there is more than a tablespoon of fat in the pan, pour some (but not all) of it off into a jar or bowl.

6. Turn burner heat down to medium. Add ground spices to the pan and when they begin to sizzle add spinach and salt and pepper to taste. Cook, stirring with a wooden spoon and deglazing the bottom of the pan with the liquid that comes off the spinach, until spinach wilts, 2 to 3 minutes. Remove to a platter or to plates and serve with the chicken.

Yield: Serves 4

Advance preparation: The chicken breasts can be pounded several hours ahead – but marinate them shortly before cooking — and kept between pieces of plastic in the refrigerator.

Recipe : Prosciutto-Wrapped Cod with Lemony Spinach

Choosing one special ingredient can transform an ordinary meal into an elegant one. Here, slices of paper-thin prosciutto -- salt-cured Italian ham -- dress up cod and sauteed spinach.

Ingredients
  • 4 skinless cod fillets, (6 to 8 ounces each)
  • 4 thin slices prosciutto (2 ounces total)
  • 2 tablespoons plus 1 teaspoon olive oil
  • 3 to 4 bunches flat-leaf spinach (2 1/2 pounds total), thick stems removed
  • 2 lemons, 1 juiced and 1 cut into wedges

Directions
  1. Heat broiler, with rack set 4 inches from heat. Season cod with salt and pepper. Wrap 1 slice prosciutto around each fillet; rub with 1 teaspoon oil, and place, seam side down, on a broilerproof baking sheet. Broil until prosciutto is browned and fish is opaque throughout, 8 to 12 minutes.
  2. Meanwhile, in a large skillet, heat remaining 2 tablespoons oil over medium. Add as much spinach as will fit in skillet; season with salt and pepper. Cook, tossing and adding more spinach as there is room, until wilted and tender, 4 to 6 minutes. Sprinkle with lemon juice; toss to combine. Serve cod with spinach and lemon wedges.

Recipe : Spinach and Red Pepper Frittata

Spinach and red peppers bring vitamin A and vitamin C to this beautiful frittata. Spinach is also an excellent source of a long list of other nutrients, including vitamin K, manganese, folate and magnesium. And it’s packed with protective phytonutrients, including the newly discovered glycoglycerolipids, which some researchers believe may help protect the digestive tract from inflammation.

Ingredients
  • 1 6-ounce bag baby spinach, or 1 bunch spinach, washed and stemmed
  • 2 tablespoons extra virgin olive oil
  • 2 red bell peppers, seeded and cut in small dice
  • 1 to 2 garlic cloves (to taste), minced
  • 10 fresh marjoram leaves, chopped
  • Salt
  • 8 eggs
  • Freshly ground pepper
  • 2 tablespoons low-fat milk

Directions
1. Steam the spinach above an inch boiling water until just wilted, about two minutes; or wilt in a large frying pan with the water left on the leaves after washing. Remove from the heat, rinse with cold water and squeeze out excess water. Chop fine, and set aside.

2. Heat 1 tablespoon of the olive oil over medium heat in a heavy 10-inch nonstick skillet. Add the bell peppers. Cook, stirring often, until tender, five to eight minutes. Add the garlic and salt to taste, stir for about half a minute, and stir in the chopped spinach and the marjoram. Stir together for a few seconds, then remove from the heat and set aside.

3. Beat the eggs in a large bowl. Stir in the salt (about 1/2 teaspoon), pepper, milk, spinach and red peppers. Clean and dry the pan, and return to the burner, set on medium-high. Heat the remaining tablespoon of olive oil in the skillet. Drop a bit of egg into the pan; if it sizzles and cooks at once, the pan is ready. Pour in the egg mixture. Tilt the pan to distribute the eggs and filling evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the frittata with a spatula in your other hand, to let the eggs run underneath during the first few minutes of cooking.

4. Turn the heat to low, cover and cook 10 minutes, shaking the pan gently every once in a while. From time to time, remove the lid, tilt the pan, and loosen the bottom of the frittata with a wooden spatula so that it doesn’t burn. The bottom should turn a golden color. The eggs should be just about set; cook a few minutes longer if they’re not.

5. Meanwhile, heat the broiler. Uncover the pan and place under the broiler, not too close to the heat, for one to three minutes, watching very carefully to make sure the top doesn’t burn (at most, it should brown very slightly and puff under the broiler). Remove from the heat, shake the pan to make sure the frittata isn’t sticking, and allow it to cool for at least five minutes and for as long as 15 minutes. Loosen the edges with a wooden or plastic spatula. Carefully slide from the pan onto a large round platter. Cut into wedges or into smaller bite-size diamonds. Serve hot, warm, at room temperature or cold.

Yield: Six servings.

Note: For four servings, use the same recipe but reduce the number of eggs to six.

Advance preparation: In Mediterranean countries, flat omelets are served at room temperature, which makes them perfect do-ahead dishes. They’ll keep in the refrigerator for a few days, and they make terrific lunchbox fare. They do not reheat well.

Recipe : Baked eggs with spinach and Swiss chard

Prep Time: 10 mins
Cook Time: 15 mins
Total Time: 25 mins
Yield: 2 Servings


Ingredients
  • 1 tbsp olive oil
  • 1 tsp fresh garlic, finely minced
  • 2 cups packed fresh spinach leaves, roughly-chopped into bit-sized pieces
  • 2 cups packed fresh Swiss chard leaves, removed from stem and roughly-chopped into bit-sized pieces
  • 4 large eggs
  • 1-1/2 tbsp half-and-half or heavy cream
  • 1 tbsp Parmesan cheese, finely grated
  • kosher salt and freshly-ground black pepper, to taste

Directions
  1. Preheat the oven to 400 degrees. Carefully break the eggs into small bowls so that the yolks stay intact. Set aside.
  2. In a large skillet, heat the olive oil over medium-high heat until it begins to shimmer. Add the garlic and cook for a minute or two, until just beginning to brown. Add the spinach and the Swiss chard to the skillet, and cook, stirring occasionally until the greens begin to wilt and cook down but are still bright green, about 2-3 minutes.
  3. Remove the greens from the heat and divide into 2 oven-safe ramekins or small, shallow baking dishes. Top each with two eggs. Drizzle each dish with the cream, then top with a sprinkling of Parmesan and a pinch of salt and pepper.
  4. Bake for 10-15 minutes until the cream begins to bubble and the eggs are cooked. Serve immediately.

Spinach Artichoke Dip

Ingredients:
  • 4 ounces non-fat cream cheese
  • 1/3 cup low fat plain Greek yogurt
  • 1/4 cup Parmesan-Reggiano cheese
  • 2 cloves garlic, minced
  • 10 ounces frozen spinach, thawed and drained of moisture
  • 10 ounce jar marinated artichoke quarters, drained and coarsely chopped
  • 1/4 cup shredded low fat mozzarella cheese


Directions:

1. Preheat the oven to 375 degrees.

2. Using a hand mixer, blend together the cream cheese, Greek yogurt, Parmesan-Reggiano cheese, and garlic cloves.

3. Make sure all of the water has been pressed out of your spinach. Add the spinach and chopped artichoke hearts to the cheese mixture.

4. Transfer the mixture to a small baking dish and top with the shredded mozzarella cheese.

5. Bake in the preheated oven until the cheese is bubbling and starting to brown, 20-30 minutes. Serve hot with low fat chips. Enjoy!

Recipe : Roast Pork Chop With Spinach, Mint and Anchovy Sauce

This simple, satisfying recipe comes from the Clove Club in London. A scattering of steamed spinach and fresh mint offsets the richness of pan-roasted pork and anchovy mayonnaise

Total Time: 30 minutes Serves: 4

Ingredients
  • 6 oil-packed anchovy fillets, drained
  • 1 egg
  • 1 tablespoon water
  • ½ clove garlic
  • 1 teaspoon Dijon mustard
  • Salt
  • 1 cup plus 2 tablespoons extra-virgin olive oil
  • Juice of 1 lemon
  • 4 bone-in pork chops (about 3 pounds total)
  • 4 cups large-leaf spinach with stems
  • Leaves from 2 large sprigs mint, torn
  • 4 teaspoons toasted sunflower seeds

Directions

1. In a blender or food processor, purée anchovies, egg, 1 tablespoon water, garlic, mustard and a pinch of salt until combined in a thin liquid. With motor running, slowly pour in 1 cup oil until a thick emulsion forms. Season sauce with lemon juice and salt to taste. Set aside.

2. Heat remaining oil in a large pan over medium heat. Once hot, add pork chops to pan and sear both sides until browned and cooked through, about 10 minutes total. Set chops aside and let rest at least 5 minutes before serving.

3. Meanwhile, partially fill a pot with water and insert a steamer basket, making sure water doesn’t touch bottom of steamer. Set pot over high heat and bring water to a simmer. Add spinach to basket, cover and steam until greens are just wilted, about 1 minute.

4. To serve, place a pork chop on each plate and spoon a generous dollop of anchovy emulsion alongside. Scatter spinach, mint and sunflower seeds over top.

Muffin-Tin Spinach & Mushroom Mini Quiches

 Ingredients

  • 2 tablespoons extra-virgin olive oil

  • 8 ounces fresh mixed wild mushrooms (such as oyster and shiitake), sliced

  • 1 cup thinly sliced yellow onion

  • 1 tablespoon minced garlic

  • 2 teaspoons minced fresh thyme

  • 1 (5 ounce) package fresh spinach, coarsely chopped

  • 8 large eggs

  • ⅔ cup whole milk

  • 2 teaspoons Dijon mustard

  • ½ teaspoon salt

  • ½ teaspoon ground pepper

  • ¾ cup shredded Gruyère cheese



Directions   

Step 1
Preheat oven to 325 degrees F. Heat oil in a large nonstick skillet over medium-high heat. Add mushrooms in an even layer; cook, undisturbed, until browned on the bottom, about 4 minutes. Stir and continue to cook, stirring occasionally, until browned all over, about 5 minutes. Add onion; cook, stirring occasionally, until beginning to soften, about 4 minutes. Stir in garlic and thyme; cook, stirring, until fragrant, about 2 minutes. Add spinach; cook, stirring constantly, until just wilted, about 2 minutes. Remove from heat.

Step 2
Whisk eggs, milk, Dijon, salt and pepper in a large bowl. Stir in cheese and the mushroom mixture. Coat a standard 12-cup muffin tin with cooking spray. Divide the mixture among the prepared muffin cups. Bake, uncovered, until puffed and set, about 30 minutes. Remove from the pan and serve immediately.

Artichoke Halves with Hot Spinach Dip

Main Ingredients
2 artichokes


Spinach Dip
  • 1 tablespoon whipped butter
  • 1 cup whole or low fat milk
  • 1 1/2 Tbs unbleached white flour
  • 1/16 tsp ground nutmeg
  • 1/16 tsp white pepper (black pepper can be used)
  • 1/4 - 1/3 cup shredded or grated parmesan cheese
  • 1 1/2 tsp minced garlic
  • 1/8 cup chopped green onions, white and part green (about 1 green onion, white and part of green)
  • 5 ounces frozen chopped spinach, thawed and gently squeezed of excess water
  • Salt and pepper, to taste (optional)
Directions
Step 1
Cut artichokes in half, from the stem to the tip. Using a metal spoon, scoop out the prickly thistle center and inner leaves with sharp pink tips and discard. Place artichoke halves in a microwave-safe dish with cover and add about 2 inches of water. Microwave on high about 5 minutes. Flip the halves over and microwave about 5 additional minutes. If artichokes aren’t yet cooked through and tender, microwave longer, as needed.

Step 2
While artichokes are cooking in the microwave, start making the spinach dip. Melt butter in small, non-stick saucepan over medium heat, until golden brown. Stir in 3 tablespoons of milk and the flour, nutmeg and pepper. Slowly stir in remaining milk. Bring the mixture to a gentle boil. Reduce heat to low and continue to gently boil, stirring constantly, until sauce thickens. Stir in Parmesan cheese, garlic, green onions and spinach. Continue to heat on low for a few minutes, stirring often. Add salt and pepper, to taste, if desired.

Step 3
Spoon a quarter of the hot dip in the center of each artichoke half. Simply reheat each artichoke half in the microwave for 30 seconds to warm up, if needed.

Recipe : Spinach Quiche

Yields 1 Serving

Ingredients:
  • 1 cup egg white substitute
  • 1/2 cup white mushrooms, sliced thin
  • 1/2 cup red bell pepper, diced
  • 1 cup raw spinach
  • 1/2 cup reduced-fat shredded mozzarella cheese
  • 5 sprays non-stick cooking spray
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder

Directions:
  1. Preheat oven to 350 degrees F.
  2. Combine all ingredients in a large bowl.
  3. Pour mixture into a lightly greased pie plate.
  4. Bake 30 minutes or until set; edges will start to pull away from the sides.

Recipe : Ricotta and Spinach Frittata With Mint

Ingredients
  • 6 ounces fresh spinach, stemmed and washed, or 1/2 6-ounce bag baby spinach
  • 6 eggs
  • Salt and freshly ground pepper
  • 1 cup fresh ricotta
  • 1 tablespoon chopped fresh mint
  • 1 garlic clove, minced
  • 2 tablespoons olive oil



Directions
1. Steam the spinach above 1 inch of boiling water just until it wilts, about two minutes. Rinse with cold water, squeeze out excess moisture and chop fine.

Seared Steak with Tomato Salad and Creamy Spinach

Ingredients
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons olive oil
  • Coarse salt and ground pepper
  • 2 beefsteak tomatoes, thinly sliced crosswise
  • 1 sweet onion, such as Vidalia, one half thinly sliced, other half chopped
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
  • 1/8 teaspoon ground nutmeg
  • 4 flat-iron steaks (4 to 6 ounces each)


Directions
  1. In a small bowl, whisk together vinegar and 2 tablespoons oil; season with salt and pepper. Place tomato and onion slices on a platter, and drizzle with vinaigrette. Set aside.
  2. In a medium saucepan, heat remaining tablespoon oil over medium. Add chopped onion. Cook, stirring occasionally, until onion begins to soften, 4 to 5 minutes.
  3. Add flour to pan; cook, stirring, 30 seconds. Gradually whisk in milk. Stir in spinach and nutmeg; season with salt and pepper. Cook, stirring occasionally, until spinach is tender and sauce has thickened, 3 to 5 minutes. Cover, and set aside.
  4. Heat a large skillet over medium-high. Season steaks with salt and pepper. Cook until browned and medium-rare, 3 to 4 minutes per side. Serve steaks with tomato salad and creamy spinach.

Spinach recipes

Many women under 50 are iron-deficient

Iron is important for energy because it helps deliver oxygen to every cell in your body, but it’s tricky to get because it comes in two types. Spinach and other plant sources are rich in what is called non-heme iron. Only about 2% to 20% of non-heme iron is absorbed, versus 15% to 35% of the heme iron found only in animal foods, specifically meat. Chicken liver has the most (13mg), followed by oysters (4.5mg), and beef (about 3mg).

What to do: Vitamin C helps increase your body’s uptake of non-heme iron from foods.  Add grapefruit segments to the spinach salad.

WILTED
With Skirt Steak
Sear 8 ounces skirt steak in a large skillet over high heat, turning once. Remove, let pan cool a bit, then add 2 tablespoons butter and chopped spinach; stir until it wilts, 30 seconds or so. Add 3 tablespoons olive oil, 1 tablespoon balsamic vinegar, 2 chopped tomatoes and 1/2 chopped red onion and cook another minute. Toss and top with the sliced steak; 1/2 cup crumbled blue cheese makes a nice garnish.
With Bacon
Render 4 thick bacon slices in olive oil until nearly crisp, then remove. Toss spinach with a sprig of tarragon in the rendered fat to wilt; add 1/2 pound chopped mushrooms instead of tomatoes and onion; skip the cheese and top with bacon.
With Chicken
Substitute chicken breast for steak; cook in olive oil, browning well. Wipe pan clean. Melt 3 tablespoons butter and add spinach to wilt. Add tomatoes and a handful of chopped scallions; skip the rest. Top with sliced chicken and fresh lemon juice.
STEAMED
With Parmesan
Put washed-and-still-wet spinach in a covered pot over medium-high heat. Put 2 to 4 tablespoons butter in a small saucepan over medium heat; stir occasionally until foam subsides and butter turns nut brown. When spinach is tender, after 3 to 5 minutes, drain, drizzle with butter and add 1/2 cup each toasted bread crumbs and shaved Parmesan; toss to combine.
With or Without Anchovies
Toast 2 cloves garlic in the butter, then add 1/2 cup raisins and 2 tablespoons pine nuts. (Anchovy lovers: now’s your chance.) Toss the spinach with this mixture instead of the bread crumbs and cheese.
With Cashews
Use 2 tablespoons sesame oil instead of butter, and stir in 1 chopped green chili. Add 3/4 cup cashews; cook until the cashews brown lightly. Toss with spinach, then add ¼ cup chopped scallions and 2 tablespoons lime juice. Garnish: Lime wedges.
BRAISED
With Eggs
Put 4 tablespoons butter in a large saucepan over medium heat. When it melts, add spinach, one handful at a time, stirring, and sauté until it wilts, about 5 minutes. Form 4 nests in the spinach and crack an egg in each. Cover and cook until egg whites are set, about 4 minutes. Garnish: Shaved Parmesan.
With Mussels
Chop 1 white onion and sauté it in the melted butter; add 3 tablespoons white wine. Cook spinach in this as above, and substitute 1 pound mussels for the eggs; cook until they open. Garnish: Fresh parsley.
With Soy and Ginger
Skip the butter. Put 2 tablespoons sesame oil in a large saucepan, along with 2 cloves minced garlic, 1 tablespoon freshly grated ginger and 1 tablespoon soy sauce. Add spinach and braise until completely wilted and soft, about 10 minutes.
SUPERSLOW-COOKED
With Cream
Melt 2 tablespoons butter in a deep skillet over medium-low heat; add a quarter of the spinach and cook, stirring occasionally, until the spinach has absorbed the butter; then add another tablespoon butter and more spinach and stir; repeat until the spinach is all used. Add 1 cup cream and cook until the cream is thick, at least 15 minutes. Optional: Grated nutmeg to taste.
With Indian Spices
Skip butter; use neutral oil. Sauté 2 onions and 1 clove minced garlic with 1 teaspoon each cumin, coriander and cardamom. Add 1 cup coconut milk, a few tablespoons at a time, alternating with handfuls of spinach. Cook, stirring occasionally, until coconut milk is thick, 1 hour. Add 1/2 cup chickpeas and heat through.
With rice and Carrots
Put 1/2 pound carrots and 6 cups water in a pan on high heat. Bring to a boil, then add 1/2 cup rice. When it returns to a boil, add spinach and simmer. Cook, stirring, until carrots are tender, 1/2 hour. Add 3 cloves minced garlic and 2 tablespoons butter.
