Bacon-Wrapped Hearts of Palm with Pesto

This Brazilian three-ingredient appetizer couldn't be easier. Simply wrap canned hearts of palm with bacon and roast in the oven until the bacon is crisp. They're delicious with homemade pesto or chimichurri for dipping, and are sure to be a crowd-pleaser.

Ingredients
  • 5 strips of bacon, sliced in half lengthwise

  • 5 whole hearts of palm (from one 15-ounce can), halved lengthwise

  • 1/3 cup basil pesto, for dipping

     

Directions
Step 1
Preheat the oven to 375°. Wrap each heart of palm with a strip of bacon. On a parchment-lined baking sheet, arrange the bacon-wrapped hearts of palm with the bacon ends facing down so they don't unravel.

Step 2
Bake until the bacon is browned and crisp on the underside, about 20 minutes. Turn the hearts of palm over and bake for about 10 minutes longer, until the fat is completely rendered and the bacon is crisp all over. Serve warm, with pesto for dipping.

Recipe : Bacon-Wrapped Brussels Sprouts

TOTAL TIME : 1 hour 20 mins
PREP; 25 mins
YIELD;: Serves 10 to 12

Ingredients
  • 1 pound Brussels sprouts, trimmed and halved lengthwise
  • Kosher salt and freshly ground pepper
  • 2 teaspoons chopped fresh thyme leaves
  • 14 slices bacon, halved crosswise and lengthwise (about 1 pound)
  • 1/4 cup grainy Dijon mustard
  • Grey Poupon Dijon Mustard 16 Oz
  • 2 tablespoons maple syrup
  • 1 teaspoon apple-cider vinegar


Directions
1.  Preheat oven to 400 degrees. Season Brussels sprouts with salt and pepper; sprinkle with thyme. Wrap each sprout with a piece of bacon; place seam-side down on a wire rack set over a rimmed baking sheet.

2. Bake, flipping halfway through, until bacon is crisp and sprouts are browning in places, about 45 minutes.

3. Meanwhile, in a small bowl, stir together mustard, maple syrup, vinegar, and 1/4 teaspoon salt.

4. Let sprouts cool 10 minutes before serving with dipping sauce.

Bacon Wrapped Scallop Skewers

Yields 4 Appetizer Servings
Cook Time: 13 minutes
Description

Ingredients
  • 2 tb. unsalted butter
  • 1 Tb. Spice Blend
  • 12 Slices Thick Sliced Bacon
  • 12 Large Sea Scallops
Directions
  1. Layer two pieces of paper towels on a microwave safe plate. Place bacon in a single layer. Microwave on high for 3-5 minutes to partially cook the bacon. 
  2. Once cool enough to handle, wrap one piece of bacon around each scallop. Thread onto skewers.
  3. Mix melted butter with spice blend and brush over skewered scallops. 
  4. Grill skewers over medium heat six to eight minutes, or until scallops are opaque and bacon is crisp and cooked through.

Recipe : Bacon-Wrapped Cod with Frisee

Thick fillets of any firm, flaky, and mild-flavored fish, such as halibut, haddock, or striped bass, would work well here.

Ingredients
  • 1 skinless, boneless cod fillet (1 1/4 pounds and 1 1/2 inches thick)
  • Coarse salt and ground pepper
  • 12 strips bacon (about 12 ounces total)
  • 1 1/2 teaspoons Dijon mustard
  • 1 1/2 teaspoons honey
  • 1 tablespoon sherry vinegar
  • 1 pink grapefruit, peel cut off, flesh cut into segments, juice squeezed from membranes
  • 1/4 cup extra-virgin olive oil
  • 1 large head frisee, cut into 1-inch pieces

Directions
  1. Cut fish into 4 pieces and season with salt and pepper. On a work surface, arrange 3 slices bacon so they overlap slightly. Place a piece of fish at one short end and tightly wrap with bacon, cutting off any excess bacon. Repeat with remaining fish and bacon.
  2. Whisk together mustard, honey, vinegar, and cup grapefruit juice; season with salt and pepper. Gradually whisk in oil.
  3. Heat a large nonstick pan over medium-high. Place fish, seam side down, in pan and cook until bacon is deep golden brown on all sides, about 9 minutes, turning occasionally. Toss frisee with dressing and grapefruit and serve with fish.
